Company’s Coming Pork Roast 1 hour and 15 minutes 8-12 servings
Ingredients:
- 2-3 pound boneless pork roast Glaze: - 1/2 cup honey mustard - 3 tablespoons prepared horseradish - 2 tablespoons brown sugar Garnish: - 2 16-oz cans peach halves, drained - 2 tablespoons brown sugar - 1 teaspoon cinnamon - 2 tablespoons butter - 1/4 tsp. ground red pepper
Directions:
Heat oven to 350 degrees F. Place roast in shallow roasting pan and roast for 45-60 minutes.
Meanwhile, in small bowl mix together Glaze ingredients. Spread Glaze over roast the last 20 minutes, continue roasting until internal temperature on a thermometer reads 150 degrees F. Remove roast from oven; let rest until temperature reaches 160 degrees F, about 10 minutes.
Place peach halves in shallow baking dish, cut side up. Sprinkle peaches with combined 2 tablespoons brown sugar and cinnamon; dot with butter. Slice roast and serve surrounded by peaches.
While pork is resting, place peaches in oven for 15 minutes to heat through. |
