Grilled Corn & Grape Tomato Salad

DIRECTIONS

  1. Preheat grill to medium heat. Remove husks and silk from corn. Grill until lightly charred on all sides. Remove from heat and let cool.
  2. In a small bowl, add zest, juice, garlic and basil. Whisk in olive oil and set aside.
  3. Using a sharp knife, cut kernels off the cobs and place in a large bowl. Add scallions, grape tomatoes, salt and pepper. Drizzle dressing over salad and mix well. Sprinkle with goat cheese and serve. Refrigerate any leftovers.
