If you don’t plan to use your avocado immediately, look for a firmer avocado. Underripe avocados that need more time to soften will be a lighter green. Needing it ripe in the next day or so? Opt for one that yields to gentle pressure and is a darker, richer green. It’s also been said that the longer, pear-shaped avocados have smaller seeds than the rounder ones. This means there’s more avocado “meat” in the longer ones.

Step 1: Place avocado on cutting board, and hold it securely with one hand.
Step 2: Carefully cut avocado lengthwise, slicing around seed.
Step 3: Hold with one half in palm, and use other hand to twist top half, rotating avocado until the two halves separate.
Step 4: Use spoon to pop out center pit.
Step 5: Make cuts lengthwise through flesh, taking care not to cut through peel.
Step 6: Use spoon to scoop out slices, or use fingers to gently pull peel away.
