The Ancho Chile is the ripe and dried version of a poblano chile. The drying process brings out its sweetness, giving the Ancho a flavor that’s slightly reminiscent of a raisin with an earthy balance. As complex as the region’s history, Mexican cuisine features as many as 60 different types of chiles. The Ancho chile, which is native to Mexico, is most often used when a dish requires mild heat, including when added to a mole sauce or served with pulled pork.
