Made in the Kansai region, near the ancient city of Himeji, these beautifully textured soba noodles are quintessentially Japanese in their elegant simplicity. Pristine fresh water and premium milled buckwheat flour are mixed, "sheet & rolled" and then air-dried to create a prized al dente crunch or "koshi".
