  • 4 ounces cream cheese, softened
  • 4 eggs
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract, optional
  • Nonstick cooking spray


  • In blender, combine cream cheese, eggs, almond flour, baking powder and optional vanilla.
  • Lightly coat large skillet over medium heat with cooking spray. Spoon in 2 tablespoons batter, creating 4” pancakes. Cook until golden brown; flip.
