Easily made with just 4 ingredients, these keto-friendly pancakes are great with sugar-free syrup or in place of the bread in your morning sandwich.

- 4 ounces cream cheese, softened
- 4 eggs
- 1 cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract, optional
- Nonstick cooking spray
- In blender, combine cream cheese, eggs, almond flour, baking powder and optional vanilla.
- Lightly coat large skillet over medium heat with cooking spray. Spoon in 2 tablespoons batter, creating 4” pancakes. Cook until golden brown; flip.
