Air Fryer Pakora

This version of Pakora, a spiced Indian fritter, skips deep frying in favor of the air fryer and uses coleslaw mix for easy prep.

Ingredients

  • 1⁄2 cup plain whole milk Greek yogurt
  • 2 tbsp. cilantro, chopped
  • 1 tbsp. mint, chopped
  • 2 tsp. ginger, grated or finely minced
  • 1⁄2 tsp. cumin seeds, toasted
  • 3⁄4 tsp. garlic powder, divided
  • 1 cup chickpea flour
  • 1 tsp. paprika
  • 1⁄4 tsp. ground turmeric
  • 2 tbsp. canola oil
  • 2 cups coleslaw mix
  • 1 onion, thinly julienned
  • 1 serrano chili, seeded and finely chopped
  • 1⁄3 cup water
  • Spray oil

Directions

  • In a bowl, stir together yogurt, cilantro, mint, ginger, cumin seeds and ¼ teaspoon garlic powder. Refrigerate until ready to use.
  • Heat air fryer to 350°F.
  • In a bowl, stir together chickpea flour, paprika, turmeric and remaining ½ teaspoon garlic powder. Stir in oil.
  • Add coleslaw mix, onion and chiles. Toss to combine. Add water a few tablespoons at a time until mixture is a thick batter.
  • Drop heaping tablespoons of the mixture into a greased air fryer basket; spray tops of fritters lightly with oil. Cook for 14-18 minutes, turning occasionally, until crisp and the vegetables are tender.
  • Serve fritters with yogurt sauce for dipping.
  • Refrigerate leftovers.
