Ají Amarillo Mayonnaise

Serve this Peruvian sauce with chicharrones (pork, chicken, fish, seafood fritters), beans, salads, meats, causa, potatoes, or corn.

  • 1 egg
  • 1 tsp. salt
  • 1 tsp. sugar
  • ½ tsp. ground black pepper
  • 1 tsp. mustard
  • 1 Tbsp. lime juice
  • 2 Tbsp. ají amarillo paste
  • 1 cup vegetable oil


  • In a blender, process at low speed the egg, salt, sugar, pepper, mustard, lime juice, and ají amarillo paste. Turn the speed to medium and add the oil in a thin stream until the mayonnaise is thick. Keep refrigerated and use within a couple of days.
