Almond-Basmati Rice Pilaf

Basmati rice has a nutty, sweet fragrance and fine texture that makes it perfect for pilafs and rice salads.

  • 2 cups basmati rice
  • 2½ cups water
  • 1 tsp. salt
  • 4 Tbsp. butter
  • ½ tsp. almond extract
  • 1 Tbsp. soy sauce
  • 1½ cups slivered almonds
  • 1 cup green peas
  • 1 cup golden raisins
  • ½ tsp. salt
  • ½ tsp. ground black pepper


  • In a heavy saucepan with a lid, combine rice, water, and salt. Bring to a boil, then cover and reduce to medium-low. Cook, covered, for 20 minutes.
  • In a large skillet or wok, melt butter over medium-high heat. Add almond extract, soy sauce, and slivered almonds. Sauté, stirring frequently, for 2 minutes. Add peas and raisins.
  • Spoon rice into skillet and toss until ingredients are blended. Season with salt and pepper.
