Almond Chocolate Cookies
Chocolate cookies with chopped almonds are a nice alternative to the typical chocolate chip cookie. Cocoa and vanilla enhance these crispy, crunchy cookies.

- 1⁄2 cup butter, softened
- 1 cup powdered honey
- 1 large egg
- 1⁄2 tsp. vanilla extract
- 1⁄2 tsp. salt
- 1⁄2 tsp. baking soda
- 2 Tbsp. cocoa powder
- 1 cup spelt flour
- 1⁄2 cup chopped almonds
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a mixing bowl, cream together butter and powdered honey. Beat mixture until light and airy. Beat in egg and vanilla. Add in salt, baking soda, cocoa powder, and flour. Add chopped almonds and mix. Roll into small 1 1⁄2-inch balls and place on baking sheet 2 inches apart.
- Bake for 10 minutes. Remove from baking sheet and cool on a wire rack.
