Almond Green Beans

This is a version of the classic Green Beans Amandine. It works very well as a side dish with fish dinners.

  • ¼ cup sliced almonds
  • 2 Tbsp. butter
  • 2 cups trimmed green beans, fresh
  • 2 Tbsp. water
  • 1 tsp. salt
  • ¼ tsp. ground white pepper


  • Sauté the almonds over medium heat in butter until lightly browned. Remove them from the butter and set them aside, leaving the butter in the pan.
  • Add the green beans and 2 tablespoons water to the pan and sauté until the beans are tender, about 5 minutes. Add the almonds to the beans. Sprinkle with salt and white pepper.
