Almond Mug Cake

You can turn this Almond Mug Cake into a coconut mug cake by replacing the almond milk with coconut milk, removing the almond extract, and replacing the crushed almonds with coconut shavings.

  • 3 Tbsp. coconut flour
  • ¼ tsp. baking powder
  • ⅔ tsp. granulated stevia
  • ¼ cup almond milk
  • ¾ tsp. melted coconut oil
  • ½ tsp. vanilla extract
  • ¼ tsp. almond extract
  • 1 Tbsp. crushed almonds


  • Whisk all ingredients together in a microwave-safe mug, making sure to thoroughly combine.
  • Microwave on high 90 seconds or until a toothpick inserted into center of cake comes out clean. Allow to cool slightly before serving.
