Almond-Orange Pilaf

Orange and raisins add flavor and wonderful aroma to this simple pilaf. Serve it alongside grilled salmon.

Ingredients

  • ⅓ cup sliced almonds
  • ⅓ cup orange juice
  • 1 tsp. grated orange zest
  • 1 tsp. Asian sesame oil
  • 1 Tbsp. olive oil
  • 1 cup long-grain brown rice
  • 1 onion, chopped
  • 2 cups water
  • ¼ tsp. salt
  • 3 Tbsp. fresh chopped parsley
  • 3 Tbsp. fresh basil
  • ⅛ tsp. white pepper

Directions

  • In a large saucepan, heat olive oil over medium heat. Add rice and onion and sauté for 3 minutes. Add salt, tarragon, pepper, and raisins and stir.
  • Add orange juice, zest, sesame oil, and water. Bring to a simmer, then reduce heat to low, cover, and cook until rice is tender, about 18 to 23 minutes. Fluff with a fork, and fold in almonds and parsley. Serve hot.
