Amazing Minestrone

By using all fresh and natural ingredients, you can optimize the quality of the vitamin and mineral content in the vegetables and, thus, the soup. Serve the soup by itself or over cooked whole wheat shell pasta.

  • 1 Tbsp. olive oil
  • 5 garlic cloves, peeled and chopped
  • 2 medium yellow onions, peeled and chopped
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 4 cups water
  • 4 cups marinara sauce
  • 2 medium zucchini, chopped
  • 2 cups chopped green beans
  • 1 cup soaked kidney beans
  • 1 cup soaked white beans
  • 2 cups baby spinach leaves
  • 1 Tbsp. chopped oregano
  • 2 Tbsp. chopped basil
  • 1 tsp. sea salt
  • 1 tsp. ground black pepper


  • Heat oil in a large sauce over medium heat. Sauté garlic, onion, celery, and carrots for 10 minutes. Add the water and the tomato sauce to the pot and bring to a boil.
  • Reduce heat to low and add the zucchini, green beans, kidney beans, white beans, spinach leaves, and spices. Simmer on low for 2 hours.
