Apounduquerque Ground Beef and Pork Meatball Soup

Ingredients

  • ¾ lb. ground beef
  • ¾ lb. ground pork
  • ⅓ cup uncooked rice
  • 1 egg
  • 1 tsp. oregano
  • 1 tsp. pepper
  • 2 Tbsp. olive oil
  • 1 medium onion, finely diced
  • 1 clove garlic, crushed
  • ½ cup tomato paste
  • 10 cups beef broth
  • ½ cup chopped cilantro

Directions

  • In a bowl, combine the beef, pork, rice, egg, oregano, and pepper. Mold the mixture into meatballs about the size of golf balls.
  • In a soup pot, warm the oil. Sauté the onion on medium for 3 minutes. Add the garlic and sauté for an additional 2 minutes. Stir in the tomato paste. Pour in the broth. Bring to a boil, add the meatballs, and reduce to medium-low. Cook, covered, for 30 minutes. Stir in the cilantro and serve.
