Try this as a side for pork dishes instead of applesauce. It also is wonderful with hearty winter squash.

- 3 Granny Smith apples, peeled, cored and diced
- 1 Tbsp. fresh lemon juice
- ½ cup white wine vinegar
- ¼ cup sugar
- 1 shallot, minced
- 1 Tbsp. freshly grated lemon zest
- ¼ cup golden raisins
- ½ tsp. ground cinnamon
- Toss the apples with the lemon juice in a large saucepan. Add 1 cup water, white wine vinegar, sugar, shallot, lemon zest, golden raisins, and cinnamon. Bring to a simmer and cook until apples are softened and sauce is thickened, 30 minutes. Store refrigerated.
