Apple Cranberry Muffins

  • cooking spray
  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1⁄2 tsp. salt
  • 1⁄2 cup sugar
  • 1 tsp. cinnamon
  • 1 cup peeled and finely chopped cooking apples
  • 1⁄4 cup dried cranberries
  • 1⁄4 cup butter
  • 1 large egg
  • 3⁄4 cup whole milk


  • Preheat oven to 400°F. Grease a muffin tin well. Sift flour, baking powder, and salt together. Stir in sugar and cinnamon. Toss chopped apples and cranberries in the flour mixture until well combined. Make a well in the center of the mixture.
  • Melt butter. Beat egg lightly, then combine with butter and milk. Add the liquid ingredients to the dry ingredients, and stir until just moistened. Fill muffin cups 2⁄3 full and bake for 20 to 25 minutes.
