Apple Date-Nut Loaf

This bread is sweet and chewy with a nutty crunch!

Ingredients

  • ½ cup brown sugar, packed
  • ½ cup vegan margarine, softened
  • 1 cup water
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 cup chopped dates
  • 1 cup chopped walnuts
  • 1 cup diced apples

Directions

  • Preheat oven to 400°F.
  • In a large bowl, cream brown sugar and margarine together until fluffy. Mix in water and vanilla extract. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Add flour mixture to margarine mixture, stirring until just blended. Fold in chopped dates, nuts, and apples.
  • Pour batter into a greased 9" × 5" loaf pan. Bake for 40–45 minutes, or until golden brown and a toothpick comes out clean when inserted into the center of the loaf. Cool in the pan.
