Apple and Prune Sauce for Game
These fruits are a natural with game but also go well with chicken, turkey, and pork. This simple sauce keeps in the refrigerator for at least a week.

- 12 pitted prunes, cut into pieces
- 1 cup apple cider
- 3 large Granny Smith or other tart apples, peeled, cored, and chopped
- Juice of 1 orange
- ¼" slice lemon, skin on
- 1 tsp. ground cinnamon
- ½ tsp. ground cloves
- 4 Tbsp. brown sugar
- ¼ tsp. salt
- Soak the prunes in the cider for 2 hours or until they absorb all of the liquid. Transfer prunes to a large saucepan.
- Add apples, orange juice, lemon slice, cinnamon, cloves, brown sugar, and salt. Cover and heat 20 minutes over medium heat until soft, adding more cider if necessary.
