Apple Yogurt Cinnamon Pancakes

You can substitute 1/2 cup berries for the apples in this recipe if you prefer.

  • 1 large egg
  • 1 cup plain fat-free yogurt
  • 1 Tbsp. canola oil
  • 1 cup all-purpose flour
  • 1 Tbsp. sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. ground cinnamon
  • ⅛ tsp. salt
  • ½ cup thinly sliced apple


  • Combine the egg, yogurt, and oil in a blender until smooth.
  • Sift the flour, sugar, baking powder, baking soda, cinnamon, and salt together. Add to yogurt mixture and blend.
  • Spray a griddle or large skilled with nonstick cooking spray. Heat over medium-high heat. Ladle about ⅛ cup of the mixture onto the griddle for each pancake.
  • Sprinkle each of the pancakes with apples and cook until bubbles form in the pancake. Flip over and cook until done.
