Applesauce Oat Bran Muffins

This recipe can be made completely fat free by omitting the canola oil and increasing the applesauce by 2 tablespoons.

Ingredients

  • 4 cups oat bran
  • ⅓ cup unbleached or whole wheat flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • ¼ cup sugar
  • 2¼ cups skim milk
  • 3 Tbsp. canola oil
  • 4 egg whites
  • 1 cup applesauce
  • 1 cup raisins

Directions

  • In a large bowl, combine oat bran, flour, baking soda, baking powder, cinnamon, and sugar. Stir with a whisk to remove any lumps.
  • In another bowl, whisk together milk, oil, egg whites, and applesauce. Pour wet mixture into dry mixture, and stir until dry ingredients are moistened. Stir in raisins.
  • Divide mixture into 2 dozen non-stick muffin cups. Bake at 350ºF for 20 minutes or until nicely browned. Let stand in muffin pans for a few minutes before removing.
