Applesauce Oat Bran Muffins
This recipe can be made completely fat free by omitting the canola oil and increasing the applesauce by 2 tablespoons.

- 4 cups oat bran
- 1⁄3 cup unbleached or whole wheat flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1⁄4 cup sugar
- 2 1⁄4 cups skim milk
- 3 Tbsp. canola oil
- 4 egg whites
- 1 cup applesauce
- 1 cup raisins
- In a large bowl, combine oat bran, flour, baking soda, baking powder, cinnamon, and sugar. Stir with a whisk to remove any lumps.
- In another bowl, whisk together milk, oil, egg whites, and applesauce. Pour wet mixture into dry mixture, and stir until dry ingredients are moistened. Stir in raisins.
- Divide mixture into 2 dozen non-stick muffin cups. Bake at 350ºF for 20 minutes or until nicely browned. Let stand in muffin pans for a few minutes before removing.
