Artichoke Cilantro Cocktail

  • 4 Jerusalem artichokes
  • 1 bunch fresh cilantro, about 1 cup
  • 4 large radishes, tailed and trimmed
  • 3 medium carrots, trimmed


  • Process the Jerusalem artichokes, one at a time, through your electronic juicer according to the manufacturer’s directions.
  • Roll the cilantro into a ball to compress and add.
  • Add the radishes and carrots.
  • Mix the juice thoroughly to combine and serve over ice as desired.
