Artichoke Cilantro Cocktail

- 4 Jerusalem artichokes
- 1 bunch fresh cilantro, about 1 cup
- 4 large radishes, tailed and trimmed
- 3 medium carrots, trimmed
- Process the Jerusalem artichokes, one at a time, through your electronic juicer according to the manufacturer’s directions.
- Roll the cilantro into a ball to compress and add.
- Add the radishes and carrots.
- Mix the juice thoroughly to combine and serve over ice as desired.
