Artichoke Hearts in Vinaigrette

Using frozen artichokes takes the work out of cleaning and boiling fresh artichokes. Serve them as a simple side dish or over cooked pasta.

  • 8 frozen artichoke hearts, halved
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 2 Tbsp. lemon juice
  • ¼ tsp. garlic powder
  • ¼ tsp. seasoned salt


  • Thaw the artichokes in the microwave according to the package directions.
  • In a small bowl, combine the olive oil, red wine vinegar, lemon juice, garlic powder, and seasoned salt.
  • Place the artichokes in a plastic zip-top bag. Pour in the dressing and toss to coat.
