Artichoke Hearts in Vinaigrette
Using frozen artichokes takes the work out of cleaning and boiling fresh artichokes. Serve them as a simple side dish or over cooked pasta.

- 8 frozen artichoke hearts, halved
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 2 Tbsp. lemon juice
- ¼ tsp. garlic powder
- ¼ tsp. seasoned salt
- Thaw the artichokes in the microwave according to the package directions.
- In a small bowl, combine the olive oil, red wine vinegar, lemon juice, garlic powder, and seasoned salt.
- Place the artichokes in a plastic zip-top bag. Pour in the dressing and toss to coat.
