Ashure Turkish Grain Pudding

Ingredients
- 1 cup whole grain barley
- 1⁄2 cup rye berries
- 3 cups whole milk
- 1⁄2 cup unsalted pistachios, chopped
- 1 cup Chobani® Vanilla Greek Yogurt
- 2⁄3 cup coconut chips
- 2⁄3 cup golden raisins
- 2⁄3 cup dried apricots
- 2⁄3 cup pomegranate seeds
- 1 teaspoon ground cinnamon
- 3 tablespoons honey
Directions
- In pressure cooker, cook barley and rye berries in water until al dente, about 12 minutes. (Alternative cooking method: in large pot of water, cook grains according to package directions. Strain but do not rinse.)
- In large pot, simmer milk, sugar and grains. When milk starts to thicken, add pistachios and continue to cook for 3 minutes.
- Remove from heat and let sit to cool below 175°F before adding yogurt.
- Serve garnished with coconut chips, raisins, apricots, pomegranate seeds, cinnamon and honey.
