Ashure Turkish Grain Pudding

Ingredients

  • 1 cup whole grain barley
  • 1⁄2 cup rye berries
  • 3 cups whole milk
  • 1⁄2 cup unsalted pistachios, chopped
  • 1 cup Chobani® Vanilla Greek Yogurt
  • 2⁄3 cup coconut chips
  • 2⁄3 cup golden raisins
  • 2⁄3 cup dried apricots
  • 2⁄3 cup pomegranate seeds
  • 1 teaspoon ground cinnamon
  • 3 tablespoons honey

Directions

  • In pressure cooker, cook barley and rye berries in water until al dente, about 12 minutes. (Alternative cooking method: in large pot of water, cook grains according to package directions. Strain but do not rinse.)
  • In large pot, simmer milk, sugar and grains. When milk starts to thicken, add pistachios and continue to cook for 3 minutes.
  • Remove from heat and let sit to cool below 175°F before adding yogurt.
  • Serve garnished with coconut chips, raisins, apricots, pomegranate seeds, cinnamon and honey.
