Asian-Style Pickled Cucumber Salad

This easy dish is great as a side for several meals, especially dishes that contain dried spices like yellow curry or satay.

Ingredients

  • ⅓ cup white vinegar
  • ⅓ cup sugar
  • ½ cup water
  • 1 tsp. salt
  • 3 medium pickling cucumbers, quartered and sliced thinly
  • 1 medium shallot, peeled and thinly sliced
  • 1 tsp. minced ginger
  • ¼ cup chopped cilantro

Directions

  • In a medium saucepan, bring white vinegar, sugar, water, and salt to a boil to dissolve the sugar. Turn off heat and let cool.
  • In a mixing bowl, combine all the salad ingredients and toss well with dressing. Let the salad rest for 20 minutes.
