Asian-Style Pickled Cucumber Salad
This easy dish is great as a side for several meals, especially dishes that contain dried spices like yellow curry or satay.

- 1⁄3 cup white vinegar
- 1⁄3 cup sugar
- 1⁄2 cup water
- 1 tsp. salt
- 3 medium pickling cucumbers, quartered and thinly sliced
- 1 medium shallot, peeled and thinly sliced
- 1 tsp. minced ginger
- 1⁄4 cup chopped cilantro
- In a medium saucepan, bring white vinegar, sugar, water, and salt to a boil to dissolve sugar. Turn off heat and let cool.
- In a mixing bowl, combine cucumbers, shallot, ginger, and cilantro and toss well with dressing. Let salad rest for 20 minutes.
