Aussie Shrimp on the Barbie

Here’s a classic Australian marinade for smoky grilled shrimp.

Ingredients

  • 1⁄2 cup mayonnaise
  • 1⁄2 cup sour cream
  • 2 Tbsp. chili sauce
  • 1⁄4 tsp. cayenne pepper
  • 1⁄4 cup melted butter
  • 1⁄4 cup olive oil
  • 1 Tbsp. minced parsley
  • 1 tsp. minced thyme
  • 1 Tbsp. minced cilantro
  • 3 Tbsp. fresh lemon juice
  • 3 cloves garlic, crushed
  • 1 Tbsp. minced shallot
  • 1⁄2 tsp. salt
  • 1⁄2 tsp. ground black pepper
  • 1 1⁄2 lbs. unpeeled large shrimp

Directions

  • Combine mayonnaise, sour cream, chili sauce, and cayenne pepper in a small bowl. Cover and refrigerate.
  • In a large bowl, combine butter, olive oil, parsley, thyme, cilantro, lemon juice, garlic, salt, and pepper. Add shrimp and toss to coat. Marinate in the refrigerator for 5 hours.
  • Preheat the grill.
  • Thread the shrimp onto individual skewers. Grill the shrimp for about 2 minutes per side. Serve with sauce.
