- 1 tbsp. coconut oil
- 1⁄4 cup finely diced sweet onion
- 3⁄4 cup shaved or shredded Brussels sprouts
- 3⁄4 cup cooked quinoa
- 1⁄4 cup dried cranberries
- 1⁄4 cup diced cooked chicken
- 1⁄4 cup chopped pecans
Directions
- In a large skillet, heat coconut oil over medium heat. Add onion and Brussels sprouts, cooking until tender with slight charring. Add quinoa to skillet, cook until warm.
- Transfer to bowl, top with cranberries, chicken, and pecans.
