Autumn Nourish Bowl

- 1 Tbsp. coconut oil
- ¼ cup finely diced sweet onion
- ¾ cup shaved or shredded Brussels sprouts
- ¾ cup cooked quinoa
- ¼ cup dried cranberries
- ¼ cup diced cooked chicken
- ¼ cup chopped pecans
- In a large skillet, heat coconut oil over medium heat. Add onion and Brussels sprouts, cooking until tender with slight charring. Add quinoa to skillet, cook until warm.
- Transfer to bowl, top with cranberries, chicken, and pecans.
