  • 1 Tbsp. coconut oil
  • 1⁄4 cup finely diced sweet onion
  • 3⁄4 cup shaved or shredded Brussels sprouts
  • 3⁄4 cup cooked quinoa
  • 1⁄4 cup dried cranberries
  • 1⁄4 cup diced cooked chicken
  • 1⁄4 cup chopped pecans


  • In a large skillet, heat coconut oil over medium heat. Add onion and Brussels sprouts, cooking until tender with slight charring. Add quinoa to skillet, cook until warm.
  • Transfer to bowl, top with cranberries, chicken, and pecans.
