Avocado Bagel Sandwich

This sandwich is on an untoasted bagel, so be sure to use a fresh, chewy bagel. You can also slice the bagel in thirds horizontally, adding another slice of onion and avocado.

  • 2 Tbsp. guacamole
  • 1 large bagel, sliced
  • 2 lettuce leaves
  • 6 thin slices cucumber
  • 1 slice tomato
  • 1⁄2 medium avocado, peeled, pitted, and sliced
  • 1⁄4 cup bean sprouts


  • Spread the guacamole on both halves of the bagel.
  • Layer the lettuce, cucumber, tomato, avocado, and sprouts on the bottom half of the bagel.
  • Top with the other half of the bagel and cut the sandwich in half.
