Avocado and Chickpea Smash Sandwiches
Soft creamy avocados and hearty chickpeas make a delicious vegan sandwich. Add tomatoes, cucumbers, cheese or other toppings for even bigger sandwiches.

- 1 medium avocado, peeled and pitted
- 1⁄3 cup hummus
- 1⁄4 tsp. salt
- 1⁄8 tsp. ground white pepper
- 1 cup chickpeas
- 8 slices whole wheat bread
- Place avocado in a medium bowl. Top with hummus, salt, and pepper, and mash, leaving some chunks. Fold chickpeas into avocado mixture.
- Spread avocado mixture on four slices of bread and top with the remaining slices. Cut sandwiches in half and serve.
