Avocado and Chickpea Smash Sandwiches

Soft creamy avocados and hearty chickpeas make a delicious vegan sandwich. Add tomatoes, cucumbers, cheese or other toppings for even bigger sandwiches.

  • 1 medium avocado, peeled and pitted
  • 1⁄3 cup hummus
  • 1⁄4 tsp. salt
  • 1⁄8 tsp. ground white pepper
  • 1 cup chickpeas
  • 8 slices whole wheat bread


  • Place avocado in a medium bowl. Top with hummus, salt, and pepper, and mash, leaving some chunks. Fold chickpeas into avocado mixture.
  • Spread avocado mixture on four slices of bread and top with the remaining slices. Cut sandwiches in half and serve.
