Avocado and Feta Dip

This dip comes together in just minutes and is great to serve for any occasion. It can also be served on a salad or with a roasted sweet potato.

Ingredients

  • 2 avocados, diced
  • 4 oz. crumbled feta
  • 2 Roma tomatoes, seeded and diced
  • 1⁄2 cup red onion, diced
  • 3 cloves garlic, minced
  • 1⁄2 cup fresh parsley, chopped
  • 1⁄2 tsp. salt
  • 1 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • Gluten-free crackers, to serve

Directions

  • In a medium bowl, stir avocado, feta, tomatoes, onion, garlic, parsley, salt, olive oil and vinegar together.
  • Serve with gluten-free crackers and refrigerate leftovers.
