Avocado and Feta Dip

This dip comes together in just minutes and is great to serve for any occasion. It can also be served on a salad or with a roasted sweet potato.

Ingredients
- 2 avocados, diced
- 4 oz. crumbled feta
- 2 Roma tomatoes, seeded and diced
- 1⁄2 cup red onion, diced
- 3 cloves garlic, minced
- 1⁄2 cup fresh parsley, chopped
- 1⁄2 tsp. salt
- 1 tbsp. olive oil
- 1 tbsp. apple cider vinegar
- Gluten-free crackers, to serve
Directions
- In a medium bowl, stir avocado, feta, tomatoes, onion, garlic, parsley, salt, olive oil and vinegar together.
- Serve with gluten-free crackers and refrigerate leftovers.
