Bacon Glazed Turkey Breast

- ⅓ cup orange marmalade
- 1 Tbsp. lime juice
- ½ tsp. dried mint leaves.
- 4 to 6 lb. turkey breast
- 6 slices bacon
- Combine orange marmalade, lime juice, and dried mint leaves; set aside.
- Preheat the oven to 325°F. Place the turkey breast on a rack in a shallow roasting pan. Roast uncovered about 2 hours.
- For last 30 minutes of roasting, drape bacon over turkey breast and brush with prepared glaze. Roast 30 minutes longer, until bacon is cooked and a meat thermometer in the center of the turkey reads 175°F. Let rest 10 to 15 minutes before carving.
