Bacon, Lettuce, and Tomato Salad
This classic combination makes a great sandwich, but it also makes for a super salad. Use an Italian dressing, vinaigrette, or your own favorite dressing.

- 6 slices bacon, chopped
- 2 medium tomatoes, sliced
- 3 cups chopped romaine
- 1 cup chopped radicchio
- 1⁄2 cup croutons
- 1⁄4 cup Italian dressing
- 1⁄4 tsp. salt
- 1⁄8 tsp. ground black pepper
- In a large skillet over medium heat, cook bacon until browned and crisp. Transfer bacon to paper towels to drain, reserving 1 tablespoon of bacon drippings.
- In a serving bowl, combine tomatoes, bacon, reserved drippings, romaine, radicchio, and croutons. Toss with dressing. Season with salt and pepper.
