Bacon Port Breakfast Sandwich

  • 2 slices rustic bread
  • 2 Tbsp. butter
  • 2 thick slices port cheese
  • 4 slices bacon, cooked
  • 2 Tbsp. honey
  • 1 tsp. fresh thyme


  • Spread butter on both sides of the bread. Cook one side of the buttered bread in a skillet over medium heat until light golden brown, about 2 to 4 minutes.
  • Flip the bread, top with slices of port cheese and bacon. Cover the skillet and cook just until the cheese is melted, about 3 minutes. Remove and place on serving plates.
  • In a small bowl, stir together honey and thyme. Drizzle this mixture over the top of each slice of bread.
