Baja Grilled Lobster Tails

Ingredients

  • 4 lobster tails
  • 2 tsp. sea salt
  • 2 tsp. freshly ground black pepper
  • 6 shallots, chopped
  • 3 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 3 fresh jalapeño peppers, seeded and chopped
  • 2 tsp. ground cumin
  • 2 tsp. paprika
  • ½ tsp. cayenne pepper
  • Juice of 2 limes
  • 4 Tbsp. unsalted butter
  • Lime wedges, for serving

Directions

  • Cut lobster tails in half lengthwise. Sprinkle lightly with 1 teaspoon salt and 1 teaspoon black pepper. Sauté shallots in the olive oil until golden (approximately 3 to 5 minutes). Add garlic and jalapeños; sauté for another 1 to 2 minutes. Add cumin, paprika, and cayenne. Cook, stirring, for another 1 to 2 minutes. Remove from the heat. Stir in lime juice, butter, 1 teaspoon salt, and 1 teaspoon black pepper.
  • Place the lobsters on the grill shell side down, approximately 4" from the heat source. Grill 8 to 9 minutes, occasionally turning tails onto their sides to cook through. Spoon the butter mixture over the lobsters after cooking. Serve with fresh lime wedges.
