Baked Bacon- Wrapped Scallops
This common party appetizer has been revamped for Paleo with nitrate-free bacon. You are sure to like these much better than the old unhealthy version.

- 2 Tbsp. olive oil
- 20 large scallops
- 2 Tbsp. minced garlic
- 20 slices uncured, nitrate-free bacon
- Preheat the oven to 350°F.
- Heat the olive oil in a large frying pan over medium-high heat. Sauté the scallops in the oil with the garlic until the scallops are lightly browned. Remove scallops and garlic and set aside to cool.
- Place the bacon strips on a large baking sheet. Par-bake in oven, 10 minutes, then wrap a slice around each scallop. Secure with a toothpick, then finish crisping bacon in oven.
- Serve warm.
