Baked Plantains

A baked version of a typically fried Latin delight.

  • 4 ripe plantains
  • Nonstick cooking spray
  • ½ cup orange juice
  • 1 tsp. cinnamon
  • 3 Tbsp. brown sugar


  • Preheat oven to 350°F.
  • Slice each plantain in half. Spray baking pan with nonstick cooking spray. Place plantains flat in a shallow baking dish.
  • Pour orange juice over plantains. Sprinkle with sugar and cinnamon.
  • Spray the top of the plantains again with cooking spray. Bake for 20 minutes or until tender.
