A baked version of a typically fried Latin delight.

- 4 ripe plantains
- Nonstick cooking spray
- ½ cup orange juice
- 1 tsp. cinnamon
- 3 Tbsp. brown sugar
- Preheat oven to 350°F.
- Slice each plantain in half. Spray baking pan with nonstick cooking spray. Place plantains flat in a shallow baking dish.
- Pour orange juice over plantains. Sprinkle with sugar and cinnamon.
- Spray the top of the plantains again with cooking spray. Bake for 20 minutes or until tender.
