Baked Potato Skins
This is a great way to use up leftover baked potatoes.

- 10 baked potato halves
- 1 Tbsp. melted butter
- 1 tsp. seasoned salt
- 3⁄4 cup shredded Cheddar cheese
- 5 strips bacon, cooked and crumbled
- 1 scallion, diced
- 1⁄2 cup sour cream
- Preheat oven to 375°F. Remove as much of the potato flesh as you can, leaving only the skins.
- Brush potato shells with butter and season with salt. Bake for 15 to 20 minutes, until crisp. Remove and sprinkle with cheese, bacon, and scallion. Place back in the oven for 6–8 minutes, until the cheese has melted.
- Serve with sour cream.
