Baked Sausage and Chive Scrambled Eggs

Baked eggs are perfect for a large crowd and are best when served immediately from the oven.

  • 1⁄2 cup butter
  • 20 large eggs
  • 2 tsp. salt
  • 1 3⁄4 cups milk
  • 2 cooked kielbasa or chorizo sausages, sliced
  • 1⁄4 cup chives
  • 1⁄2 cup shredded Cheddar cheese


  • Preheat oven to 350°F. In a glass-measuring cup, heat butter in the microwave until melted.
  • In a separate bowl whisk eggs, salt, milk, sausages, and chives. Pour melted butter and then egg mixture into 2 large ovenproof skillets. Bake uncovered for 5 minutes, then stir and add cheese. Bake for 10 more minutes or until eggs are set.
