Baked Tomato Frittata
This frittata can be made for a quick and easy breakfast or a relaxed weekend brunch.

- 3 egg whites
- 3 large eggs
- ½ tsp. salt
- 4 Tbsp. crumbled feta cheese
- 1 medium tomato, chopped
- Preheat oven to 375ºF. Beat egg whites with eggs in a medium bowl. Add the salt.
- Set a small skillet over medium heat. Coat with cooking spray and add the egg mixture, tomato, and feta. Cook for 4 minutes or until the edges of the eggs are firm. Transfer to the hot oven for 5 minutes, or until the middle no longer jiggles when gently shaken.
- Remove from the oven and let it rest for 5 minutes. Slice and serve.
