Baked Tomato Frittata

This frittata can be made for a quick and easy breakfast or a relaxed weekend brunch.

  • 3 egg whites
  • 3 large eggs
  • 1⁄2 tsp. salt
  • 4 Tbsp. crumbled feta cheese
  • 1 medium tomato, chopped


  • Preheat oven to 375°F. Beat egg whites with eggs in a medium bowl. Add the salt.
  • Set a small skillet over medium heat. Coat with cooking spray and add the egg mixture, tomato, and feta. Cook for 4 minutes or until the edges of the eggs are firm. Transfer to the hot oven for 5 minutes, or until the middle no longer jiggles when gently shaken.
  • Remove from the oven and let it rest for 5 minutes. Slice and serve.
