Banana Bread Breakfast Porridge

Sweet and nutty, this breakfast porridge is a protein-packed way to start the day. Serve this porridge warm with almond milk, if desired.

  • 1½ cups almond flour
  • ¼ cup shredded coconut
  • 2 cups water
  • ⅛ tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 2 tsp. vanilla extract
  • 2 Tbsp. honey
  • 1 medium ripe banana, peeled and sliced
  • 1 Tbsp. chopped walnuts
  • 2 strawberries


  • Place almond flour, coconut, water, and salt in a medium pot on the stovetop. Heat over medium heat, stirring frequently. Cook for 10 minutes, or until mixture has begun to boil and thicken slightly.
  • Remove from heat and stir in cinnamon, vanilla, and honey. Cool slightly. As the mixture cools, it will thicken.
  • Divide oatmeal between two bowls and top with bananas, nuts, and strawberries.
