Banana Bread Breakfast Porridge
Sweet and nutty, this breakfast porridge is a protein-packed way to start the day. Serve this porridge warm with almond milk, if desired.

- 1½ cups almond flour
- ¼ cup shredded coconut
- 2 cups water
- ⅛ tsp. kosher salt
- 1 tsp. ground cinnamon
- 2 tsp. vanilla extract
- 2 Tbsp. honey
- 1 medium ripe banana, peeled and sliced
- 1 Tbsp. chopped walnuts
- 2 strawberries
- Place almond flour, coconut, water, and salt in a medium pot on the stovetop. Heat over medium heat, stirring frequently. Cook for 10 minutes, or until mixture has begun to boil and thicken slightly.
- Remove from heat and stir in cinnamon, vanilla, and honey. Cool slightly. As the mixture cools, it will thicken.
- Divide oatmeal between two bowls and top with bananas, nuts, and strawberries.
