Banana Bunny Pancakes

Easy, filling and yummy Chiquita Banana Pancakes

Ingredients

  • 4 tbsp. whole meal flour, heaping tablespoons
  • 2 eggs
  • 1 tbsp. caster sugar
  • 1 tsp. fine sea salt
  • 3⁄4 cup milk
  • 3⁄4 cup blueberries
  • 4 Chiquita banana
  • 1 dash vegetable oil, for frying
  • 1 cup strawberries
  • 1 raspberry

Directions

  • Place the flour into a large bowl and whisk in the eggs. Add the sugar and salt, then gradually beat in the milk until you have a thick but smooth consistency.
  • Grease a large frying pan with vegetable oil and place on a medium heat.
  • Add a tablespoon of the batter and swirl to create a small circle. Directly beneath it, and slightly overlapping, spoon a larger circle of batter to make the body of the bunny. Let the pancakes cook until the batter is evenly golden, then flip and allow the other side to cook. Repeat with the remaining batter and keep the cooked bunnies warm on a plate covered with tin foil.
  • Meanwhile, chop the strawberries into quarters and decorate the bottom of the serving plates to look like grass, studded with blueberries, saving 8 blueberries for the bunny eyes. Place the bunnies above the strawberries.
  • Halve each Chiquita banana. With one half, cut long strips of Chiquita banana to look like whiskers and small triangles to look like teeth. With the other half, slice vertically into two long bunny ears.
  • Use these to decorate the pancake along with a raspberry nose and blueberry eyes.
