- ½ cup butter, softened
- ½ cup sugar
- 2 large eggs, beaten
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- ⅓ cup buttermilk
- 1 cup mashed ripe banana
- 1 tsp. vanilla extract
- Preheat oven to 350°F. Grease and flour a 9" × 5" × 3" loaf pan.
- In a bowl, cream the butter until smooth. Gradually add the sugar, beating well. Stir in the eggs. In another bowl, sift together the flour, baking powder, baking soda, and salt. In yet another bowl, combine the buttermilk and banana.
- Add the flour mixture to the butter mixture alternately with the banana mixture. Stir in the vanilla. Spread the batter in the prepared pan.
- Bake for 30 minutes until a knife comes out clean. Cool on a rack.
