Banana Protein Waffles

It’s easy to get kids to eat their protein when it’s baked into these warm, banana-based breakfast favorites.

Ingredients

  • 2 ripe bananas, mashed
  • 2 eggs, beaten
  • 2 tablespoons butter or coconut oil, melted
  • 1 cup almond flour
  • 1⁄2 cup Simple Truth™ Vanilla Whey Protein Powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1⁄4 teaspoon salt
  • Nut butter, optional

Directions

  • Heat waffle iron according to manufacturer instructions.
  • In large bowl, whisk together mashed banana, eggs and coconut oil.
  • Stir in remaining ingredients until well blended.
  • Scoop batter into waffle iron; cook until golden brown on the outside.
  • Serve topped with peanut or almond butter.
