Basic Brown Rice
Brown rice makes an excellent breakfast cereal substitute for those with gluten intolerance. It’s wonderful with fresh or dried fruits and berries.

- 2½ cups water
- 1 tsp. salt
- 1 Tbsp. olive oil
- 1½ cups uncooked brown rice
- Preheat oven to 375°F.
- Combine the water, salt, and olive oil in a saucepan and bring to a boil.
- Put the brown rice in a 2-quart baking dish and pour the boiling water mixture over it. Stir, cover with foil, and bake for 60 minutes. Fluff with a fork and serve hot.
