Basic Salad Dressing
Make this salad dressing once a week so that you have it readily available for side salads and quick lunches. Dressing can be stored in the refrigerator for approximately 10 days. Remember to take it out of the refrigerator to warm a bit before use.

- 1⁄2 cup red wine vinegar
- 1 Tbsp. Dijon mustard
- 1 cup extra-virgin olive oil
- 1⁄2 tsp. fresh thyme, chopped
- Juice of 1 medium lemon
- 1⁄4 tsp. salt
- 1⁄4 tsp. ground black pepper
- Combine all ingredients in a small bowl and whisk until emulsified. Store in the refrigerator.
