What’s the secret to superb homemade slaw? Salting and rinsing the veggies like you do in this recipe draws out extra moisture, preventing a soupy, watery salad from running all over your plate of picnic food.

Ingredients

  • 1 head (2 lbs.) green cabbage, finely shredded
  • 2 large carrots, shredded
  • 1 onion, thinly sliced
  • 1⁄4 cup + 2 Tbsp. sugar, divided
  • 2 tablespoons salt
  • 1⁄2 cup + 2 Tbsp. mayonnaise
  • 2 tablespoons white wine vinegar
  • 1⁄2 teaspoon ground black pepper
  • 1⁄2 teaspoon celery seed

Directions

  • In large mixing bowl, toss cabbage, carrot and onion with ¼ cup sugar and salt. Let stand 10 minutes.
  • Meanwhile, whisk together mayonnaise, vinegar, remaining 2 tablespoons sugar, black pepper and celery seed.
  • Drain and rinse cabbage mixture. Place on towel-lined surface, top with another towel; press dry.
  • In large bowl, toss cabbage mixture with dressing. Adjust seasoning to taste.
  • Refrigerate leftovers.
