  • 5 1⁄2 cups all-purpose flour
  • 1 1⁄2 tsp. baking soda
  • 1 tsp. cream of tartar
  • 2 cups granulated sugar, divided
  • 1 1⁄2 cups powdered sugar
  • 1 1⁄2 cups butter
  • 3 large eggs
  • 2 tsp. vanilla
  • 3⁄4 cup vegetable oil

  • Preheat oven to 350°F.
  • Sift the flour, soda, and cream of tartar together and set aside. Cream together 1 1⁄2 cups granulated sugar, powdered sugar, and butter until light and fluffy. Add the eggs one at a time, beating well after each, then add the vanilla. Add the oil and beat until smooth. Slowly add the dry ingredients, blending well.
  • Roll dough into balls about 1 1⁄2 inches in diameter, roll in remaining 1⁄2 cup sugar, then place on a cookie sheet 3 inches apart. (If the dough is too soft, refrigerate until it can be easily worked.) Flatten cookies slightly with a glass bottom dipped in sugar, and bake 10 to 12 minutes, or until the edges are golden brown.
