BBQ Spare Ribs

Roasting the ribs plain before adding the barbecue sauce removes some of the fat and also makes the ribs crisper.

Ingredients

  • 4 lbs. meaty pork spare ribs
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 Tbsp. vegetable oil
  • 1 onion, chopped
  • 5 cloves garlic, chopped
  • ⅓ cup honey
  • 1 can (14 oz.) diced tomatoes with green chiles, undrained
  • 1 can (6 oz.) tomato paste
  • ½ cup ketchup
  • 3 Tbsp. adobo sauce
  • 1 Tbsp. mustard
  • 1 cup chicken broth
  • ½ tsp. dried oregano leaves
  • ½ tsp. salt
  • ⅛ tsp. cayenne pepper

Directions

  • Preheat oven to 400°F. Sprinkle ribs with salt and pepper and place in heavy baking pan. Roast ribs, uncovered, for 1 hour. Drain fat from pan.
  • While ribs are roasting, in heavy saucepan sauté onions and garlic in vegetable oil until tender. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 20–25 minutes, stirring frequently, until sauce is slightly thickened. Pour over ribs in baking pan. Reduce oven temperature to 350°F and roast ribs for 80–95 minutes, basting occasionally with sauce, until ribs are very tender.
