Beef Goulash a la Vasiloff

Ingredients

  • 3 Tbsp. butter
  • 2 large onions, peeled and chopped
  • 1 clove garlic, peeled and minced
  • 2 lbs. cubed beef
  • ½ lb. cubed pork
  • 1 tsp. sugar
  • ¼ cup ketchup
  • 2 Tbsp. paprika
  • 1 tsp. caraway
  • ⅛ tsp. cayenne pepper
  • 1 bay leaf
  • 2 Tbsp. all-purpose flour
  • ¼ cup water
  • ½ tsp. salt
  • ½ tsp. ground black pepper

Directions

  • In a large skillet, melt the butter. Sauté the onion and garlic in the butter. Add the meat and sprinkle with sugar; brown the meat slightly. Add water to cover, ketchup, paprika, caraway, cayenne, and the bay leaf, and simmer until tender, at least 1½ hours.
  • To make gravy, add the flour to the water in a small bowl; stir into the broth. Cook and stir until thickened and bubbly. Season with salt and black pepper.
