Beef and Hominy Chili

Ingredients

  • 3 lbs. lean ground beef
  • 1 medium onion, peeled and chopped
  • 1 can (28 oz.) tomato sauce
  • 3 cups water
  • 3 Tbsp. chili powder
  • 1½ Tbsp. cumin
  • ¾ tsp. oregano
  • 1½ tsp. paprika
  • ¼ tsp. cayenne pepper
  • 1 Tbsp. salt
  • 2 cans (15 oz.) hominy corn
  • ¼ cup masa flour

Directions

  • Brown the meat and onion. Drain. Add the remaining ingredients except the masa. Simmer about 1½ hours.
  • Mix the masa with enough water to make a thin paste. Add slowly to the simmering chili, stirring constantly. Cook 15 minutes more.
